Neige is a celebrated Québec ice cider produced from apples concentrated by the province’s naturally cold winter conditions. The concentrated juice undergoes slow fermentation, producing an intensely aromatic dessert cider combining considerable sweetness with the acidity of fresh apples. The official Québec listing identifies this Neige as Cidre de Glace du Québec IGP, produced by Cidrerie Milton in Sainte-Cécile-de-Milton. The current 375ml expression contains 10% alcohol and approximately 180 g/L residual sugar. Its aromatic profile is described as ripe apple and apple compote with apricot and marmalade notes, giving a rich, concentrated palate balanced by refreshing acidity. Neige has particular historical interest because it is described as the first commercially marketed ice cider from Québec and worldwide, helping establish ice cider as one of Québec’s signature specialty drinks.
