Filipa Pato & William Wouters – Nossa Calcário Bical 2025 – Bairrada DOC One of the flagship white wines of Filipa Pato & William Wouters, Nossa Calcário Bical is a highly terroir-driven expression of 100% Bical from the limestone-rich soils of Óis do Bairro in Bairrada. The 2025 is produced from selected old-vine fruit, with whole-cluster pressing, spontaneous fermentation and élevage in large oak barrels. The producer describes it as its “trophy white,” made from its best and oldest Bical grapes. Elegant and mineral rather than fruit-driven, it combines pear and white-fruit notes with a distinctive flinty, saline character, creamy texture and vibrant acidity. It is a serious, gastronomic Portuguese white with excellent structure and persistence. The bottle photographed is the 2025 vintage, 75cl, and the label states a production of only 8,449 bottles, adding interest for collectors of small-production Portuguese wines.
